1️⃣ in a food processor, add 150g of pitted dates, 3 chipped bananas, 3 eggs, 1 scoop of unflavoured whey protein, 175g of spelt flour (or wholemeal flour), 2 tbsp of cinnamon, 2 tbsp of desiccated coconut, 1 tbsp of baking powder & 1 tsp of bicarbonate of soda.
2️⃣ Blitz thoroughly in food processor until smooth mixture is achieved.
3️⃣ Line a loaf tin with non stick baking paper and evenly pour mixture into the tin before adding 2 tbsp of chia seeds scattered over the top.
4️⃣ Bake at 175 degrees for 55 minutes before allowing to cool. Add a tbsp of desiccated coconut over the top if you wish!
